  • 2 medium zucchini grated and squeezed
  • 1/2 cup all-purpose flour can substitute with whole wheat
  • 1 large egg can use flaxseed egg for vegan
  • 1 handful fresh herbs like parsley and dill
  • 1 clove garlic minced
  • 1/4 cup onion finely chopped
  • to taste salt
  • to taste pepper
For the Dipping Sauce
  • 1 cup Greek yogurt mix with lemon juice and herbs
  • 1/2 cup sour cream alternative to yogurt

Method
 

Step-by-Step Instructions
  1. Grate about 2 medium zucchinis into a large bowl and squeeze out excess moisture.
  2. Add 1/2 cup of all-purpose flour, 1 egg, 1/4 cup of finely chopped onion, and fresh herbs. Mix well.
  3. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.
  4. Scoop and flatten the fritter mixture into rounds in the skillet; cook for about 3-4 minutes on each side.
  5. In a small bowl, combine 1 cup of Greek yogurt with lemon juice and herbs for the dipping sauce.
  6. Transfer cooked fritters to a paper towel-lined plate and serve warm with the dipping sauce.
