Step-by-Step Instructions for Shrimp Ceviche
  1. Boil the shrimp in a medium pot of water for 1-2 minutes, until fully opaque and pink.
  2. Transfer the cooked shrimp to a bowl filled with ice water to cool for 2-3 minutes, then chop into small pieces.
