  • 2 tablespoons fresh dill Chopped
  • 1 cup green olives Optional
For the Dressing
  • 1/4 cup extra virgin olive oil High-quality
  • 1 juiced lemon
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1-2 cloves garlic Minced

Step-by-Step Instructions
  1. Wash and cut the potatoes into 1-inch pieces. Boil in salted water for 15-20 minutes until fork-tender but firm. Drain and cool.
  2. In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
  3. In a large bowl, combine the cooled potatoes, olives, feta, parsley, and dill. Gently fold together.
  4. Drizzle the dressing over the salad and toss gently to coat without mashing the potatoes.
  5. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.
  6. Chill for about 30 minutes before serving for best flavor.
