Preparation Steps
  1. Start by selecting a ripe, seedless watermelon that sounds hollow when tapped. Use a sharp knife to cut the watermelon into cubes, aiming for about 1-inch pieces. Place the watermelon cubes into a large mixing bowl.
  2. Gently fold in crumbled feta cheese and chopped fresh mint leaves into the bowl with watermelon.
  3. Drizzle the salad with extra virgin olive oil and lime juice. Season with salt and black pepper. Toss gently to coat all the ingredients.
  4. Mix in thinly sliced red onion and lime zest for added flavor if desired.
