Step‑by‑Step Instructions
  1. In a large pot, heat a splash of plant-based oil over medium heat. Add finely chopped onions and minced garlic, sauté for 5-7 minutes until translucent.
  2. Add the long-grain rice to the pot, stirring well. Toast the rice for 2-3 minutes until slightly translucent.
  3. Introduce tomato paste and ajvar into the pot. Stir for about 1-2 minutes, letting the tomato paste caramelize slightly.
  4. Pour in the crushed tomatoes, stir, and increase heat to a gentle boil.
  5. Add water, ensuring the rice is submerged. Stir occasionally as it comes back to a boil.
  6. Once boiling, add frozen peas directly. Cook for about 10 minutes, monitoring water levels.
  7. After 10 minutes, add the diced red bell pepper and simmer for another 5-7 minutes until rice is tender.
  8. Season with salt, pepper, and preferred herbs. Allow to rest off the heat for 2-3 minutes before serving.
