  • 500 g Mehl (Flour) Type 1050 wheat flour is preferred.
  • 20 g Frische Hefe (Fresh Yeast) Ensure it's fresh.
  • 0.5 tsp Zucker (Sugar) Helps activate the yeast.
  • 1 tsp Kristallsalz (Sea Salt) Adjust to taste.
  • 2 tbsp Olivenöl (Olive Oil) Plant-based oil can be substituted.
  • 30 ml Lauwarmes Wasser (Warm Water) Use initially, with an additional 250 ml later.
For the Filling
  • 200 ml Sojasahne (Soy Cream) Any plant-based cream works as a substitute.
  • 2 tbsp Zitronensaft (Lemon Juice) Freshly squeezed is best.
  • 0.25 tsp Muskatnuss (Nutmeg) Use sparingly.
  • 400 g Kartoffeln (Potatoes) Opt for firm varieties.
  • 100 g Lauch (Leek) Can substitute with onions.
  • 150 g Champignons (Mushrooms) Feel free to replace or omit.
  • 100 g Pflanzliche Sauerrahm (Vegan Sour Cream) Choose a brand you like.
For Garnish
  • 2 tbsp Petersilie (Parsley) Can also use chives or dill.

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour, fresh yeast, sugar, and 30 ml of warm water. Stir well and let rest for about 30 minutes.
Knead and Rise
  1. Add sea salt and 250 ml of warm water to the dough. Knead for 5-7 minutes, then let it rise for one hour.
Incorporate Olive Oil
  1. Punch down the risen dough, stir in olive oil, and knead for another minute.
Prepare the Baking Sheet
  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and spread the dough evenly.
Make the Creamy Filling
  1. In a bowl, mix soy cream, lemon juice, nutmeg, salt, and pepper.
Layer the Vegetables
  1. Distribute diced potatoes and sliced leeks over the dough, seasoning with salt and pepper.
Bake to Perfection
  1. Bake for 30 minutes, then spread vegan sour cream on top and return to oven for 5 minutes.
Garnish and Serve
  1. Cool for a few minutes, garnish with parsley, slice into squares, and serve warm.
