  • 1 large Onion (sliced) or shallots
  • 4 cloves Garlic (crushed) or garlic powder
  • 2 tbsp Tomato Paste omit for a lighter taste
  • 2 cups Red Wine or beef broth as non-alcoholic substitute
  • 1 cup Beef Broth low-sodium recommended
For Additions
  • 2 cups Baby Carrots or parsnips
  • 1 sprig Thyme or 1 tsp dried thyme
  • 1 sprig Rosemary or Italian seasoning

Step-by-Step Instructions
  1. Prep the meat by washing and patting dry your boneless short ribs. Season generously with salt and black pepper.

  2. Set your Instant Pot to 'Sauté' mode and add the oil. Sear the short ribs for 4-5 minutes on each side until browned.

  3. Add sliced onion to the pot and cook for 8-10 minutes until translucent and golden brown.

  4. Stir in crushed garlic and tomato paste. Cook for 2 minutes until fragrant.

  5. Pour in red wine and scrape the bottom of the pot. Let it cook for about 10 minutes, reducing by half.

  6. Add beef broth and baby carrots, mixing well. Return the short ribs to the pot, submerging them halfway.
