- Prep the meat by washing and patting dry your boneless short ribs. Season generously with salt and black pepper.

- Set your Instant Pot to 'Sauté' mode and add the oil. Sear the short ribs for 4-5 minutes on each side until browned.

- Add sliced onion to the pot and cook for 8-10 minutes until translucent and golden brown.

- Stir in crushed garlic and tomato paste. Cook for 2 minutes until fragrant.

- Pour in red wine and scrape the bottom of the pot. Let it cook for about 10 minutes, reducing by half.

- Add beef broth and baby carrots, mixing well. Return the short ribs to the pot, submerging them halfway.

- Lock the lid in place and set to 'Stew' mode for 40 minutes on high pressure.

- Allow the pressure to release naturally for 15-20 minutes before venting the remaining steam.

- Remove short ribs and strain the sauce into a separate pot. Simmer the sauce on 'Sauté' mode for 10 minutes to thicken.

- Serve the ribs on a platter with thickened gravy poured over them.
