- Preheat your oven to 375°F (190°C). Prepare your baking dish by greasing it lightly with butter or oil.
- Peel and slice the sweet potatoes into thin, even rounds. Boil them in water for 10–15 minutes until fork-tender, then drain.
- In a greased baking dish, layer half of the sweet potato slices evenly at the bottom.
- Sprinkle half of the cranberries over the first layer of sweet potatoes.
- In a medium bowl, whisk together the heavy cream, brown sugar, cinnamon, salt, and pepper. Pour half over the layered ingredients.
- Repeat the layering process with remaining sweet potatoes, cranberries, and pour the remaining cream mixture over the top.
- Sprinkle Gruyère cheese and breadcrumbs over the top. Bake for 30–35 minutes until bubbly and golden brown.
- Let the gratin cool for a few minutes before serving to allow the layers to set slightly.
