Step-by-Step Instructions
  1. Heat a large skillet over medium heat. Season chicken breasts with salt and pepper, cook for 6-7 minutes on each side until internal temperature reaches 165°F.
  2. While the chicken cooks, prepare rice according to package instructions, typically taking 15-20 minutes. Fluff with a fork and add salt and pepper.
  3. Just before assembling, slice the ripe avocado in half, remove the pit, scoop out the flesh, and slice into thin pieces.
  4. Using a ring mold, layer the cooked rice, followed by chicken slices, and then avocado slices. Drizzle with remaining honey-lime glaze to finish.
