Method
 

Chimichurri Sauce Preparation
  1. Finely mince the garlic, fresh parsley, and cilantro. In a medium bowl, combine with olive oil, red wine vinegar, oregano, salt, and crushed red pepper flakes. Stir until fully blended.
Steak Preparation
  1. Take the steak out of the refrigerator 30 minutes before cooking. Season both sides generously with salt and pepper.
Searing the Steak
  1. Preheat a cast iron skillet over high heat for about 5 minutes. Add oil and sear the steak for 2 minutes on each side.
Oven Cooking
  1. Transfer the skillet to a preheated oven at 415°F and bake for 4 to 9 minutes based on desired doneness.
Resting the Steak
  1. Remove the skillet from the oven and let the steak rest for 5-7 minutes.
Serving
  1. Slice the steak against the grain and drizzle chimichurri sauce over the slices before serving with sides.
