Chimichurri Sauce Preparation
- Finely mince the garlic, fresh parsley, and cilantro. In a medium bowl, combine with olive oil, red wine vinegar, oregano, salt, and crushed red pepper flakes. Stir until fully blended.
Steak Preparation
- Take the steak out of the refrigerator 30 minutes before cooking. Season both sides generously with salt and pepper.
Searing the Steak
- Preheat a cast iron skillet over high heat for about 5 minutes. Add oil and sear the steak for 2 minutes on each side.
Oven Cooking
- Transfer the skillet to a preheated oven at 415°F and bake for 4 to 9 minutes based on desired doneness.
Resting the Steak
- Remove the skillet from the oven and let the steak rest for 5-7 minutes.
Serving
- Slice the steak against the grain and drizzle chimichurri sauce over the slices before serving with sides.
