- Preheat your broiler to high. Arrange two slices of sourdough bread on a baking sheet and place it under the broiler for about 1-2 minutes until they are lightly toasted and golden brown.
- Once the bread is toasted, flip each slice over on the baking sheet. Place a generous layer of sharp cheddar cheese on one slice and return it to broil for another 1-2 minutes, or until the cheese is bubbling and melted.
- Remove the toasted bread from the oven carefully. On the uncheesed slice, spread a layer of grainy Dijon mustard. Drizzle honey over the mustard, then layer pickled jalapeños, thin apple slices, red onion rings, arugula, and kettle chips.
- Gently place the cheese-covered slice atop your assembled ingredients to create a complete sandwich. Press down lightly to crunch the chips slightly. Use a sharp knife to slice the sandwich in half.
