Ingredients

For the Pasta
  • 8 ounces Spaghetti Swap for gluten-free pasta if desired.
For the Chicken
  • 1 pound Chicken Breast Using pre-cooked or rotisserie chicken saves time.
For the Cheese Sauce
  • 1 cup Mozzarella Cheese Opt for low-fat mozzarella for a lighter dish.
  • 1 cup Sharp Cheddar Cheese Mild cheddar is a great substitute if you prefer less sharpness.
  • 1/2 cup Parmesan Cheese Consider nutritional yeast for a vegan alternative.
  • 4 ounces Cream Cheese A lighter cream alternative can reduce calories.
  • 1 cup Heavy Cream Half-and-half works well for a lighter option.
For Seasoning
  • 2 tablespoons Cajun Seasoning Adjust the spice level to match your preference.
  • 1 teaspoon Smoked Paprika Regular paprika can substitute if needed.
  • 3 cloves Garlic Fresh garlic is your best bet for the tastiest results.
  • 2 tablespoons Olive Oil Switch to butter for an extra rich flavor.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Equipment

  • Large pot
  • Skillet
  • Saucepan

Method

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a rolling boil and add the spaghetti. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Slice the chicken breast into strips, season with salt, pepper, and half of the Parmesan cheese. Heat a skillet over medium-high heat, add olive oil, and sauté the chicken strips for 5-7 minutes until golden brown.
  3. In a separate saucepan, melt olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes. Lower the heat, stir in the cream cheese, heavy cream, mozzarella, and sharp cheddar. Cook for 5 minutes until smooth and creamy.
  4. Return the spaghetti to the skillet with the chicken. Pour the creamy cheese sauce over the pasta and sprinkle in the Cajun seasoning. Toss together for 2-3 minutes until well coated.
  5. Serve hot, garnishing with remaining Parmesan cheese and fresh herbs if desired.
