Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium mixing bowl, whisk together flour, baking powder, and salt.
  3. Using a stand mixer, beat together softened butter and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract to the creamed mixture, mixing on low speed.
  5. Gradually pour dry ingredients into wet mixture, mixing until just combined.
  6. Fold in Christmas jimmies sprinkles gently with a spatula.
  7. Portion dough using a 3-tablespoon cookie scoop, spacing them on prepared baking sheets.
  8. Gently flatten each cookie dough ball to about ½ inch thick.
  9. Bake for 9-11 minutes until edges firm up and centers are soft.
  10. Reshape warm cookies into perfect circles if necessary.
  11. Cool cookies on baking sheets for 5 minutes, then transfer to wire racks.
  12. Prepare cream cheese frosting by beating cream cheese and butter until smooth, then add powdered sugar.
  13. Frost cooled cookies generously and add festive sprinkles on top.
