Ingredients

  • 1/4 cup Soy Sauce opt for low-sodium if desired
  • 1/4 cup Teriyaki Sauce can be replaced with homemade mix
  • 2 tablespoons Sesame Oil substitute with olive oil for lighter taste
For the Fried Rice
  • 4 cups Day-Old Rice ideal for texture in fried rice
  • 2 large Eggs can be omitted for vegan version
  • 1 cup Frozen Peas and Carrots substitute with fresh or other frozen options
  • 1/4 cup Green Onions or shallots/chives as substitutes
For the Veggies
  • 1 medium Zucchini sauté for a vibrant addition
  • 1 medium Onion freshly diced onions are a fresh substitute
For Seasoning
  • 1 teaspoon Garlic Powder fresh minced garlic can be used if preferred
  • 1 teaspoon Onion Powder freshly diced onions can be substituted
  • 2 tablespoons Vegetable Oil use canola or grapeseed oil as alternatives

Method
 

Marinate the Chicken
  1. Cut the chicken breasts into bite-sized pieces. In a bowl, combine soy sauce, teriyaki sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Add the chicken and marinate for 20 minutes.
Scramble the Eggs
  1. Heat your Blackstone griddle over medium-high heat and drizzle vegetable oil. Crack the eggs onto the surface, scramble for 2-3 minutes, then push to the side.
Prepare the Fried Rice
  1. In the cleared area of the griddle, add day-old rice, frozen peas, and carrots. Drizzle with soy sauce, stir, and cook for 5-7 minutes.
Sauté the Vegetables
  1. Add vegetable oil to the griddle, add zucchini and onion. Sprinkle with salt and pepper, then sauté for 5-7 minutes.
Cook the Marinated Chicken
  1. Increase griddle heat to high and add marinated chicken. Cook for 6-8 minutes until nicely browned and cooked through.
Serve the Meal
  1. Assemble the feast on individual plates and serve hot, optionally adding yum yum sauce or spicy mayo.
