Marinate the Chicken
- Cut the chicken breasts into bite-sized pieces. In a bowl, combine soy sauce, teriyaki sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Add the chicken and marinate for 20 minutes.
Scramble the Eggs
- Heat your Blackstone griddle over medium-high heat and drizzle vegetable oil. Crack the eggs onto the surface, scramble for 2-3 minutes, then push to the side.
Prepare the Fried Rice
- In the cleared area of the griddle, add day-old rice, frozen peas, and carrots. Drizzle with soy sauce, stir, and cook for 5-7 minutes.
Sauté the Vegetables
- Add vegetable oil to the griddle, add zucchini and onion. Sprinkle with salt and pepper, then sauté for 5-7 minutes.
Cook the Marinated Chicken
- Increase griddle heat to high and add marinated chicken. Cook for 6-8 minutes until nicely browned and cooked through.
Serve the Meal
- Assemble the feast on individual plates and serve hot, optionally adding yum yum sauce or spicy mayo.
