  • 1 can Coconut Condensed Milk at room temperature
  • 2 cups Soy Milk at room temperature
  • 3 large Eggs at room temperature
  • 1 cup Pumpkin Puree thick and smooth
For the Flavoring
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ground Ginger optional
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Cloves adjust to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C).
  2. Pour caramel sauce evenly into the bottom of a steam pudding pan.
  3. Blend the coconut condensed milk, soy milk, eggs, pumpkin puree, cinnamon, ground ginger, ground nutmeg, and ground cloves until smooth and creamy.
  4. Pour the flan mixture over the caramel layer in the steam pudding pan.
  5. In a large baking dish, fill halfway with boiling water and place the steam pudding pan in it.
  6. Bake for 60 minutes without opening the oven door.
  7. After baking, cool on a wire rack for 1 hour, then refrigerate overnight.
  8. Run a knife around the edges and invert onto a large serving plate to serve.
