- Pat dry scallops with paper towels. Season with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat. Sear scallops for 2-3 minutes on each side until golden and opaque.
- In the same skillet, add butter. Once melted, sauté onion and garlic until translucent.
- Pour in heavy cream and stir in Cajun seasoning. Simmer for 5 minutes.
- Return scallops to the sauce and warm through for 1-2 minutes.
- Drizzle lemon juice over scallops and garnish with fresh parsley before serving.
