  • 4 cups Sweet Potatoes Diced
  • 1 lb Ground Beef Can be substituted with ground turkey or plant-based crumbles
  • 1 medium Onion Chopped; red or yellow
  • 2 cloves Garlic Minced
  • 1 cup Cottage Cheese Can substitute with Greek yogurt or vegan ricotta
  • 1 medium Avocado Ripe, for topping
For the Hot Honey Drizzle
  • 1 tbsp Hot Honey Or regular honey

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash, peel, and dice the sweet potatoes. In a mixing bowl, drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25 minutes, tossing halfway through.
  4. While the sweet potatoes roast, heat olive oil in a skillet. Sauté the chopped onion until translucent, then add minced garlic and cook until fragrant.
  5. Add ground beef to the skillet and cook until browned, seasoning with salt and pepper.
  6. In a bowl, combine hot honey with a pinch of cayenne or chili flakes.
  7. Assemble the bowl by layering roasted sweet potatoes, sautéed ground beef, cottage cheese, hot honey drizzle, and avocado slices.
