- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium-high heat for 7-8 minutes until fully cooked.
- Sauté diced onion for about 5 minutes, then add minced garlic for the last minute.
- Mix in corn, Rotel, black beans, cooked rice, and seasonings. Heat through for 3-4 minutes.
- Wash and cut the tops off the bell peppers, removing seeds. Microwave for 2-3 minutes for tenderness.
- Stuff the bell peppers with the filling and sprinkle shredded cheese on top.
- Place in a baking dish and bake uncovered for 20-25 minutes.
- Let cool for a few minutes before serving.
