Ingredients
  

For the Filling
  • 1 lb Ground Beef Use lean ground beef for a hearty filling.
  • 2 cups Cooked Rice Opt for brown rice for extra fiber.
  • 1 can Corn Feel free to use fresh corn.
  • 1 can Rotel Diced Tomatoes and Green Chilis Adjust spice levels according to your preference.
  • 1 can Black Beans Kidney beans make a great substitute.
  • 1 small Onion Diced for even distribution.
  • 2 cloves Minced Garlic Use fresh garlic for best results.
  • 1 tbsp Chili Powder Substitutable with taco seasoning.
  • 1 tsp Oregano Italian seasoning is an excellent substitute.
  • 1 tsp Cumin Omit for a milder flavor.
  • 1 tsp Salt Adjust according to taste.
  • 1 pinch Cayenne Skip if serving kids.
  • 1 cup Shredded Cheese Use any cheese you love.
For the Peppers
  • 4 Bell Peppers Choose any color you love.

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 7-8 minutes until fully cooked.
  3. Sauté diced onion for about 5 minutes, then add minced garlic for the last minute.
  4. Mix in corn, Rotel, black beans, cooked rice, and seasonings. Heat through for 3-4 minutes.
  5. Wash and cut the tops off the bell peppers, removing seeds. Microwave for 2-3 minutes for tenderness.
  6. Stuff the bell peppers with the filling and sprinkle shredded cheese on top.
  7. Place in a baking dish and bake uncovered for 20-25 minutes.
  8. Let cool for a few minutes before serving.
