For the Chimichurri Sauce
  • 1 cup Fresh Parsley finely chopped
  • cup Olive Oil extra virgin preferred
  • ¼ cup Red Wine Vinegar
  • 3 cloves Garlic minced
  • ½ teaspoon Red Pepper Flakes adjust for desired heat
  • 1 teaspoon Dried Oregano substitute with fresh if preferred
  • Salt and Pepper to taste
  • 1 tablespoon Lime Juice freshly squeezed

Instructions
  1. Prepare Chimichurri Sauce: In a medium bowl, combine parsley, olive oil, red wine vinegar, and minced garlic. Add red pepper flakes, dried oregano, and season with salt and pepper. Squeeze in lime juice and mix well.
  2. Marinate Shrimp: In a large bowl, toss shrimp with half of the prepared chimichurri sauce. Cover and refrigerate for at least 30 minutes.
  3. Preheat Grill: Preheat your grill or grill pan over medium-high heat, about 375°F to 400°F.
  4. Cook Shrimp: Grill the marinated shrimp for about 2-3 minutes on each side or until they turn bright pink and opaque.
  5. Serve: Remove shrimp from the grill and drizzle with remaining chimichurri sauce. Garnish with fresh parsley or lime wedges.
