  • 4 pieces Bone-In Chicken Thighs skin-on for crispiness
  • 2 tablespoons Salted Butter can use unsalted
  • 2 tablespoons Olive Oil
For Seasoning
  • 1 teaspoon Onion Powder or fresh onion
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Smoked Paprika substitute with regular paprika
  • 1 teaspoon Fresh Thyme reduce to 1/3 if dried
  • 1 tablespoon Fresh Rosemary or dried, use less
For the Vegetables
  • 1 medium Red Onion or yellow onion
  • 2 pieces Honeycrisp Apples or Fuji/Gala apples
For the Sauce
  • 1 cup Apple Cider or pear cider
  • 1 cup Chicken Broth/White Wine or vegetable broth
  • 2 tablespoons Dijon Mustard or whole grain mustard
  • 4 cloves Garlic minced
For Finishing Touches
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. Pat the chicken thighs dry and season with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary. Let sit.
  3. Heat olive oil in the skillet over medium-high heat. Sear the chicken skin-side down for 6-8 minutes until golden brown, then flip and brown the other side for 5 minutes.
  4. Sauté sliced red onion and apples in the skillet for 3-5 minutes until onions are translucent.
  5. For the sauce, dispose of excess grease, return to heat, add butter and garlic, then stir in apple cider, chicken broth, and mustard. Simmer for a few minutes.
  6. Return chicken to the skillet and roast in the oven for 25-30 minutes until internal temperature reaches 165°F (74°C).
  7. Allow to rest for 5 minutes before serving. Optionally whisk in a cornstarch slurry to thicken the sauce.
