- Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
- Pat the chicken thighs dry and season with salt, pepper, onion powder, garlic powder, smoked paprika, thyme, and rosemary. Let sit.
- Heat olive oil in the skillet over medium-high heat. Sear the chicken skin-side down for 6-8 minutes until golden brown, then flip and brown the other side for 5 minutes.
- Sauté sliced red onion and apples in the skillet for 3-5 minutes until onions are translucent.
- For the sauce, dispose of excess grease, return to heat, add butter and garlic, then stir in apple cider, chicken broth, and mustard. Simmer for a few minutes.
- Return chicken to the skillet and roast in the oven for 25-30 minutes until internal temperature reaches 165°F (74°C).
