- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, combine chopped pistachios, honey, minced fresh rosemary, a pinch of sea salt, and freshly cracked black pepper.
- Roll out the chilled puff pastry until about 1/8 inch thick and cut into 3-inch squares.
- Place a piece of Brie in the center of each pastry, spoon the pistachio mixture on top, and fold the corners over to seal.
- Whisk the egg for an egg wash and brush the tops of the pastry with the egg wash.
