Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, combine chopped pistachios, honey, minced fresh rosemary, a pinch of sea salt, and freshly cracked black pepper.
  3. Roll out the chilled puff pastry until about 1/8 inch thick and cut into 3-inch squares.
  4. Place a piece of Brie in the center of each pastry, spoon the pistachio mixture on top, and fold the corners over to seal.
  5. Whisk the egg for an egg wash and brush the tops of the pastry with the egg wash.
  6. Transfer the bites to the prepared baking sheet and bake for 15-20 minutes until golden brown.
