- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 7–10 minutes.
- Add diced onion and minced garlic to the skillet. Sauté for about 5 minutes until the onion is translucent.
- Stir in diced tomatoes, tomato paste, oregano, and basil. Season with salt and pepper, then simmer for 10 minutes.
- In a bowl, combine ricotta cheese with salt and pepper. Add grated Parmesan if desired.
- Layer lasagna sheets in the skillet, spread half of the ricotta mixture, and then half of the meat sauce.
- Add more lasagna sheets, remaining ricotta, and top with the remaining meat sauce.
- Sprinkle shredded mozzarella cheese over the top and any remaining Parmesan.
- Cover the skillet and reduce heat to low. Simmer for 30 minutes until cheese is bubbly.
- Remove from heat and let rest for 5-10 minutes before serving.
