  • 1 cup Breadcrumbs Use gluten-free if needed.
  • 1 large Egg For a vegan alternative, try a flax egg.
  • to taste Seasonings (salt, pepper, paprika) Feel free to add cayenne for a kick.
For the Potatoes
  • 2 medium Potatoes Yukon Gold or Russet preferred.
  • 2 tbsp Olive Oil Can swap with vegetable oil.

Method
 

Cooking Instructions
  1. Preheat a large skillet over medium heat for 3-5 minutes.
  2. In a mixing bowl, combine ground beef, breadcrumbs, beaten egg, onion, garlic, and seasonings. Mix gently.
  3. Roll the mixture into uniform-sized meatballs, about the size of a golf ball.
  4. Sear the meatballs in the skillet for 4-5 minutes until browned on all sides, then set them aside.
  5. In the same skillet, add potatoes and cook for 15-20 minutes until golden and fork-tender.
  6. Nestle the meatballs back into the skillet with the potatoes, cover, and let simmer for 5-10 minutes.
  7. Sprinkle fresh herbs over the dish before serving.
