For the Topping
  • 1 cup Shredded Cheddar Cheese can replace with other melty cheeses
  • 1 cup Shredded Mozzarella Cheese consider pepper jack for spiciness
For Cooking
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika smoked paprika can be used
  • 1 teaspoon Dried Thyme fresh thyme is an excellent alternative

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté ground turkey for 5 to 7 minutes until browned.
  3. Add diced onions and bell peppers to the skillet and cook for another 5 minutes.
  4. Toss in fresh spinach or kale and stir until wilted (about 2 to 3 minutes).
  5. In a large bowl, combine the turkey-vegetable mixture with cubed sweet potatoes.
  6. Transfer the mixture into a greased baking dish and top with shredded cheddar and mozzarella cheese.
  7. Bake for 25 to 30 minutes until cheese is bubbly and golden brown.
  8. Allow the casserole to rest for 5 minutes before serving.
