Ingredients
  

Meatballs
  • 1 lb Ground Beef can substitute with ground lamb or turkey
  • 3 cloves Garlic minced
  • 1 Onion finely minced
  • 1/2 cup Breadcrumbs gluten-free varieties work well
  • 1 tsp Baking Soda
  • 1/4 cup Fresh Herbs mix of parsley, mint, coriander
  • 2 tbsp Olive Oil extra virgin
  • 1 tsp Salt adjust to taste
  • 1 tsp Pepper adjust to taste
Roasted Potatoes
  • 2 cups Potatoes Yukon gold or red
  • 1 tsp Cumin
  • 1 tsp Paprika
Tzatziki Sauce
  • 1 cup Greek Yogurt full-fat preferred
  • 1/2 Cucumber grated, excess moisture squeezed out
  • 2 tbsp Lemon Juice fresh
  • 2 tbsp Dill or Mint fresh
For Serving
  • 1 Lettuce as a base
  • 1 Tomatoes chopped
  • 1 Cucumbers chopped
  • 1 Red Onion sliced
  • 1/2 cup Kalamata Olives sliced
  • 2 tbsp Extra Olive Oil for dressing
  • 1 tbsp Lemon Juice for dressing

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, and fresh herbs. Drizzle in olive oil, season with salt and pepper, and mix thoroughly. Cover and refrigerate for at least 2 hours.
Baking the Meatballs
  1. Preheat your oven to 425°F (220°C). Shape the meat mixture into small meatballs, about 1 inch in diameter, and place them on a lined baking sheet. Bake for approximately 30–40 minutes, flipping them halfway through.
Roasting Potatoes
  1. Cut potatoes into wedges, toss with olive oil, salt, cumin, paprika, and oregano. Roast alongside meatballs for 40–60 minutes, flipping halfway through.
Making Tzatziki
  1. In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill or mint. Mix well and chill for at least 20 minutes.
Assembling the Bowl
  1. Layer fresh lettuce in each bowl, add salad ingredients, roasted potatoes, meatballs, and a dollop of tzatziki with a drizzle of olive oil and lemon juice.
