  1. Begin by dividing the enoki mushrooms into small bundles. Wrap thin slices of beef around each bundle and set aside.
  2. In a bowl, mix dashi broth, mirin, soy sauce, sugar, and black pepper until well combined.
  3. Heat olive oil in a skillet and caramelize sliced yellow onion for 3-5 minutes.
  4. Place beef-wrapped enoki rolls over caramelized onions, drizzle umami sauce on top, cover, and cook for 3 minutes.
  5. Flip rolls and cook for an additional 1-2 minutes until beef is browned.
  6. Scramble eggs lightly and drizzle over cooked rolls, cover, and simmer for 2 minutes.
  7. Remove from heat, garnish with green onion and sesame seeds, and serve hot.
