Method

Step-by-Step Instructions for Bang Bang Fried Rice
  1. Prepare the Bang Bang Sauce by whisking together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl. Set aside.
  2. Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Add the diced chicken breast and sauté for 5-6 minutes until golden brown.
  3. In the same skillet, pour in the 3 beaten eggs and stir gently for 2-3 minutes until just set. Remove and set aside with the chicken.
  4. Add another drizzle of oil to the skillet. Toss in the diced carrots and minced garlic, sautéing for 2-3 minutes until tender-crisp.
  5. Add in the frozen green peas and sauté for an additional minute.
  6. Increase the heat to high and add the cooked rice, breaking any clumps up. Stir-fry for 3-4 minutes until the rice is crispy.
  7. Combine cooked chicken and eggs with the rice, adding soy sauce and mixing evenly. Cook for an additional 2-3 minutes.
  8. Drizzle the Bang Bang Sauce over the mixture, stirring gently. Heat through for another minute.
  9. Remove from heat, garnish with sliced green onions, and serve hot.
