  • 3 tablespoons Fish sauce Vegetarian alternative: soy sauce.
  • 3 tablespoons Soy sauce Use gluten-free if needed.
  • 1 tablespoon Honey Maple syrup can be a substitute.
  • 1 tablespoon Sesame oil Can replace with any cooking oil.
  • 1 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes Adjust according to taste.
For Cooking
  • 2 tablespoons Vegetable oil Any neutral oil works.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Trim the lemongrass and finely chop the tender part. Mince the garlic and shallot.
  3. In a mixing bowl, combine lemongrass, garlic, shallot, fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes. Whisk until well-blended.
  4. Cut chicken thighs into bite-sized pieces and coat with the marinade. Let marinate in the refrigerator for at least 30 minutes.
  5. Heat vegetable oil in a skillet over medium-high heat. Once hot, add the marinated chicken in batches.
  6. Sear each side of the chicken for 2-3 minutes until golden brown.
  7. Transfer seared chicken to a baking dish and bake for 20-25 minutes until cooked through.
  8. Let chicken rest for a few minutes before serving. Garnish with green onions and cilantro, and serve with jasmine rice.
