- Preheat your oven to 400°F (200°C).
- Trim the lemongrass and finely chop the tender part. Mince the garlic and shallot.
- In a mixing bowl, combine lemongrass, garlic, shallot, fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes. Whisk until well-blended.
- Cut chicken thighs into bite-sized pieces and coat with the marinade. Let marinate in the refrigerator for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Once hot, add the marinated chicken in batches.
- Sear each side of the chicken for 2-3 minutes until golden brown.
- Transfer seared chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Let chicken rest for a few minutes before serving. Garnish with green onions and cilantro, and serve with jasmine rice.
