  • 2 cups Apples Mix of Fuji and Granny Smith
  • 1 cup Grapes Mix of red and green
  • 1 cup Pecans Toasted
  • 1/2 cup Dried Cranberries
For the Dressing
  • 1/2 cup Greek Yogurt Or dairy-free yogurt
  • 2 tbsp Honey Adjust to taste
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Cinnamon Optional
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Wash apples thoroughly, core and chop into bite-sized pieces. Set aside in a large mixing bowl.
  2. Wash grapes and halve them. Add to the bowl with chopped apples and toss gently.
  3. Toast pecans in a medium pan over medium heat for about 5 minutes until golden and fragrant. Let cool.
  4. Add cooled pecans and dried cranberries to the fruit mixture. Toss gently to combine.
  5. In another bowl, whisk together Greek yogurt, honey, apple cider vinegar, and cinnamon until smooth.
  6. Pour dressing over the salad mixture and gently fold to coat everything evenly.
  7. Taste and adjust seasoning with salt and pepper, or more honey and vinegar if desired.
  8. Cover and refrigerate for at least 30 minutes to meld flavors.
  9. Gently stir before serving and garnish with extra nuts or cranberries if desired.
