  • 4 fillets Fresh Red Snapper Choose firm, pinkish fillets.
  • 2 tablespoons Olive Oil For searing the fish.

For the Sauce
  • 1 cup Heavy Whipping Cream Be cautious with the heat.

  • 2 cloves Garlic Minced, sauté until fragrant.
  • 1 tablespoon Lemon Juice Add gradually to keep the cream from curdling.

Method
 

Directions
  1. Preheat the oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a medium saucepan over medium heat, then sauté 2 minced garlic cloves until fragrant.
  3. Reduce heat to low and whisk in 1 cup of heavy whipping cream, stirring until warmed through.
  4. Season 4 fresh red snapper fillets with salt, pepper, and dried herbs.
  5. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the fish skin-side down for 3-4 minutes.
  6. Flip the fish and cook for an additional 2 minutes.
  7. Transfer the skillet to the preheated oven and bake for an additional 5 minutes.
  8. Stir in the zest and juice of one lemon into the cream sauce and simmer until thickened.
  9. Baste the fish with melted butter from the skillet.
  10. Serve the red snapper fillets with the lemon cream sauce on top.
