- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a medium saucepan over medium heat, then sauté 2 minced garlic cloves until fragrant.
- Reduce heat to low and whisk in 1 cup of heavy whipping cream, stirring until warmed through.
- Season 4 fresh red snapper fillets with salt, pepper, and dried herbs.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the fish skin-side down for 3-4 minutes.
- Flip the fish and cook for an additional 2 minutes.
- Transfer the skillet to the preheated oven and bake for an additional 5 minutes.
- Stir in the zest and juice of one lemon into the cream sauce and simmer until thickened.
- Baste the fish with melted butter from the skillet.
- Serve the red snapper fillets with the lemon cream sauce on top.
