  • 3 cups cooked shredded chicken or rotisserie chicken
  • 1 cup sour cream Greek yogurt makes a great substitution
  • 8 oz cream cheese
  • 1/2 cup mayonnaise or more sour cream
  • 2 cups cheddar cheese Colby Jack or Monterey Jack are substitutes
  • 1 medium onion fresh or dry onion works
For the Topping
  • 1 cup Ritz crackers or panko breadcrumbs for gluten-free

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, cream cheese, sour cream, mayonnaise, and cheddar cheese. Mix until creamy.
  3. Grease a 9x13 inch casserole dish. Spread the chicken filling evenly into the dish.
  4. Crush Ritz crackers and sprinkle over the filling.
  5. Bake for approximately 30 minutes until golden brown and bubbling.
  6. Cool for a few minutes before serving.
