  • 1 small Chopped Onion or shallots for milder taste
  • 1/4 cup Fresh Cilantro or parsley as an alternative
  • 1 medium Jalapeño Pepper add more for extra heat or omit for milder
  • 2 cloves Garlic, minced use fresh for best flavor
  • 1 tsp Ground Cumin can substitute with ground coriander
  • 1 tbsp Chili Powder adjust to taste
  • 1 tsp Smoked Paprika use regular paprika if preferred
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Shredded Cheddar Cheese or Monterey Jack as an alternative
  • 1 cup Crushed Tortilla Chips can use bread crumbs instead
  • 1 large Beaten Egg or a flax egg for vegan option
For Cooking and Serving
  • 2 tbsp Olive Oil or any cooking oil
  • 15 oz Mexican-Style Tomatoes with Green Chiles or plain diced tomatoes with spices
  • 2 lime Fresh Lime Wedges for garnishing

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, fresh cilantro, minced jalapeño, and garlic. Add ground cumin, chili powder, smoked paprika, salt, and pepper. Mix gently.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips until evenly distributed.
  4. Add the beaten egg and mix until well combined.
  5. Roll the mixture into golf ball-sized meatballs, aiming for about 15 meatballs.
  6. Heat olive oil in your skillet over medium heat and sear the meatballs for about 5 minutes, turning occasionally.
  7. Pour the can of Mexican-style tomatoes over the meatballs.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, checking for an internal temperature of 160°F (71°C).
  9. Let the meatballs rest for a few minutes and serve hot with fresh lime wedges.
