Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
- Cream together ½ cup of softened butter and 1 cup of sugar until light and fluffy using a mixer.
- Add in 2 beaten eggs and mix until well combined.
- In another bowl, whisk together 1.5 cups of flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in 1 cup of mashed bananas, 0.5 cup of sour cream, and 1 teaspoon of vanilla extract.
- Transfer the batter into the prepared loaf pan, filling it about ¾ full.
- Bake for 50-55 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
