  • 1.5 cups all-purpose flour or whole wheat for added nutrition
  • 1 teaspoon baking soda ensure it's fresh
  • 0.5 teaspoon salt adjust according to butter type
  • 1 cup mashed overripe bananas star ingredient
  • 0.5 cup sour cream Greek yogurt can substitute
  • 1 teaspoon vanilla extract optional but recommended
  • 0.5 cup chopped walnuts or chocolate chips as alternative

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan.
  2. Cream together ½ cup of softened butter and 1 cup of sugar until light and fluffy using a mixer.
  3. Add in 2 beaten eggs and mix until well combined.
  4. In another bowl, whisk together 1.5 cups of flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in 1 cup of mashed bananas, 0.5 cup of sour cream, and 1 teaspoon of vanilla extract.
  7. Transfer the batter into the prepared loaf pan, filling it about ¾ full.
  8. Bake for 50-55 minutes or until a toothpick comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
