- Begin by heating a non-stick skillet over medium heat. Add 1 tablespoon of unsalted butter to the pan and allow it to melt evenly, swirling the pan gently to coat the surface.
- Once the butter is melted, place a slice of your selected sourdough or country-style bread in the pan. Spread a layer of spinach pesto over the bread.
- Tear the fresh burrata into pieces and scatter them atop the pesto, then place another slice of bread on top.
- Cook for about 3-4 minutes, until the bottom slice is deep golden brown, then carefully flip and cook the other side for another 3-4 minutes.
- Once both sides are golden and the burrata is gooey, remove the sandwich from the skillet, slice in half, and serve immediately.
