- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar for 2-3 minutes until light and fluffy.
- Mix in the whole egg, egg yolk, peppermint extract, and green food coloring until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
- Scoop the dough into 1-inch balls and place them on the baking sheets, spacing them 2 inches apart.
- Bake in the preheated oven for 7-9 minutes until edges are set but centers are soft.
- Remove cookies from the oven and let cool for 2 minutes before pressing a chocolate kiss into each cookie.
- Transfer cookies to a wire rack to cool completely.
