Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  3. Mix in the whole egg, egg yolk, peppermint extract, and green food coloring until well combined.

  5. Scoop the dough into 1-inch balls and place them on the baking sheets, spacing them 2 inches apart.
  6. Bake in the preheated oven for 7-9 minutes until edges are set but centers are soft.
  7. Remove cookies from the oven and let cool for 2 minutes before pressing a chocolate kiss into each cookie.
  8. Transfer cookies to a wire rack to cool completely.
