Preparation
- Preheat a skillet over medium heat and add olive oil, allowing it to warm for 1-2 minutes.
- Warm low-carb tortillas in the microwave for 10-15 seconds to soften.
- In a mixing bowl, combine shredded chicken, mozzarella, cheddar, softened cream cheese, minced garlic, parsley, salt, pepper, and baby spinach if using. Mix until evenly coated.
- Place filling mixture down the center of each tortilla and roll tightly, tucking in the sides.
- Cook wraps seam-side down in the skillet for 2-3 minutes on each side until golden and crispy.
- Remove from skillet, slice in half, and serve immediately.
