  • 2 cups Shredded Chicken Use cooked chicken breast or rotisserie chicken
  • 1 cup Mozzarella Cheese Shredded, preferably from a block
  • 1 cup Cheddar Cheese Shredded
  • 2 cloves Garlic Minced, fresh preferred
  • 8 oz Cream Cheese Softened
  • 1/4 cup Fresh Parsley Chopped
  • 1 cup Baby Spinach Optional, mixed into filling
Cooking
  • 2 tbsp Olive Oil For cooking
  • 4 pieces Low-Carb Tortillas Mission Carb Balance recommended

Method
 

Preparation
  1. Preheat a skillet over medium heat and add olive oil, allowing it to warm for 1-2 minutes.
  2. Warm low-carb tortillas in the microwave for 10-15 seconds to soften.
  3. In a mixing bowl, combine shredded chicken, mozzarella, cheddar, softened cream cheese, minced garlic, parsley, salt, pepper, and baby spinach if using. Mix until evenly coated.
  4. Place filling mixture down the center of each tortilla and roll tightly, tucking in the sides.
  5. Cook wraps seam-side down in the skillet for 2-3 minutes on each side until golden and crispy.
  6. Remove from skillet, slice in half, and serve immediately.
