Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Peel and cube sweet potatoes into bite-sized pieces. Mince garlic and prepare chicken by trimming excess fat.
  2. In a medium bowl, whisk together maple syrup, Dijon mustard, and olive oil until smooth. Reserve half for later and coat chicken with the other half.
  3. Marinate chicken in half of the sauce, sprinkling salt and pepper to taste. Let it soak in while preparing sweet potatoes.
  4. Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 15 minutes.
  5. After 15 minutes, add marinated chicken with remaining sauce to the baking sheet. Bake for another 15-20 minutes until chicken reaches 165°F (75°C).
  6. Assemble bowls starting with fresh greens, followed by tender chicken and roasted sweet potatoes, drizzling reserved maple Dijon sauce on top.
