- Preheat your oven to 400°F (200°C). Peel and cube sweet potatoes into bite-sized pieces. Mince garlic and prepare chicken by trimming excess fat.
- In a medium bowl, whisk together maple syrup, Dijon mustard, and olive oil until smooth. Reserve half for later and coat chicken with the other half.
- Marinate chicken in half of the sauce, sprinkling salt and pepper to taste. Let it soak in while preparing sweet potatoes.
- Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 15 minutes.
- After 15 minutes, add marinated chicken with remaining sauce to the baking sheet. Bake for another 15-20 minutes until chicken reaches 165°F (75°C).
- Assemble bowls starting with fresh greens, followed by tender chicken and roasted sweet potatoes, drizzling reserved maple Dijon sauce on top.
