- Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
- Halve or quarter the fresh Brussels sprouts and cut the carrots into batons. Place in a mixing bowl.
- Drizzle melted coconut oil over the vegetables, season with paprika, garlic powder, coriander, salt, and pepper. Toss to coat.
- Arrange seasoned vegetables in a single layer on the baking sheet.
- Roast the vegetables in the oven for approximately 25 minutes, tossing halfway through.
- In the last 5-10 minutes, drizzle maple syrup over the vegetables and toss gently.
- Remove from the oven, stir in remaining coconut oil and maple syrup, then serve while hot.
