  • 4 medium Russet Potatoes or sweet potatoes for a sweeter flavor
  • 2 tablespoons Olive Oil or avocado oil as a substitute
  • 1 teaspoon Garlic Powder or fresh garlic cloves
  • 1 teaspoon Onion Powder or sautéed fresh onion
  • 1 teaspoon Smoked Paprika or sweet paprika

For the Meat
  • 1 pound Ground Beef or Turkey or lean turkey, plant-based crumbles are great alternatives
For the Beans & Corn
  • 1 can Black Beans or cooked version
  • 1 cup Corn fresh, frozen, or canned
For the Toppings
  • 1 cup Cheddar Cheese or Monterey Jack, dairy-free cheese
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Cilantro optional
  • 1 cup Tomatoes or cherry tomatoes, pico de gallo
  • 1/4 cup Green Onions or chives
  • 1 Jalapeños optional
  • 1 unit Lime for serving

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and dice the russet potatoes into 1-inch cubes, then toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread the potatoes on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. In a skillet, cook the ground beef or turkey over medium-high heat for 5-7 minutes until browned, then drain excess fat.
  5. Add taco seasoning and 1/4 cup water to the meat; simmer for 2-3 minutes.
  6. Warm the black beans and corn in a small pot over low heat for 5 minutes, stirring occasionally.
  7. Assemble the bowl by layering roasted potatoes, seasoned meat, beans, corn, and cheese.
  8. Garnish with sour cream, cilantro, tomatoes, green onions, jalapeños, and serve with lime wedges.
