- Boil a large pot of salted water, add orzo pasta and cook according to package instructions, about 8–10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, and oregano. Sauté for 5–7 minutes until cooked through. Remove chicken and let it rest.
- In the same skillet, add garlic and cook for about 30 seconds. Toss in mixed vegetables and cook for 3–4 minutes until tender yet crisp.
- Return the chicken to the skillet with the veggies, add orzo, lemon juice, lemon zest, and chicken broth. Stir for 2–3 minutes until heated through.
- Taste and adjust seasoning with salt, pepper, or lemon juice.
- Transfer to a serving dish and garnish with parsley before serving.
