Method
 

Cooking Instructions
  1. Boil a large pot of salted water, add orzo pasta and cook according to package instructions, about 8–10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, and oregano. Sauté for 5–7 minutes until cooked through. Remove chicken and let it rest.
  3. In the same skillet, add garlic and cook for about 30 seconds. Toss in mixed vegetables and cook for 3–4 minutes until tender yet crisp.
  4. Return the chicken to the skillet with the veggies, add orzo, lemon juice, lemon zest, and chicken broth. Stir for 2–3 minutes until heated through.
  5. Taste and adjust seasoning with salt, pepper, or lemon juice.
  6. Transfer to a serving dish and garnish with parsley before serving.
