Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine peach preserves, soy sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper in a mixing bowl and whisk until smooth.
  3. Pat the chicken thighs dry and season with salt and pepper.
  4. Heat an oven-safe skillet over medium-high heat with a splash of oil, then sear chicken thighs skin-side down for 5-7 minutes.
  5. Flip the chicken thighs and sear for another 3-4 minutes.
  6. Pour the peach glaze evenly over the chicken thighs.
  7. Bake in the oven for 25-30 minutes, checking for an internal temperature of 165°F (75°C).
  8. In the last 10 minutes of baking, add diced fresh peaches over the chicken.
  9. Optionally baste chicken thighs with pan juices midway through baking.
