  • 1 lb Ground Chicken Can substitute with ground turkey or lean pork.
  • 1 cup Parmesan Cheese Sharp richness; Romano can be used as an alternative.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be used if needed.
  • 1 large Eggs Acts as a binding agent.
  • 3 cloves Minced Garlic Adjust to taste.
  • 1 tsp Garlic Powder Fresh garlic can be used for a more intense flavor.
  • 1 tsp Onion Powder
  • 1 tsp Dried Basil Can be replaced with dried oregano.
  • 1 tsp Dried Parsley Fresh parsley for garnish.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 1/2 cup Whole Milk Substitute with dairy-free milk if necessary.
  • 1/4 cup Unsalted Butter Used for the glaze.
For the Glaze
  • 1/4 cup Unsalted Butter Dairy-free alternative can be used.
  • 2 cloves Minced Garlic Sauté until fragrant.
  • 1/4 cup Parmesan Cheese Optional to add more.
  • 1 tbsp Dried Parsley Consider fresh parsley.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and prepare a baking sheet lined with parchment paper or lightly grease a loaf pan.
  2. In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix until just combined.
  3. Form the mixture into a loaf shape and transfer it to the prepared baking sheet or greased loaf pan.
  4. Bake for 40-45 minutes until the internal temperature reaches 74°C (165°F) and the surface is browned.
  5. While baking, prepare the glaze by melting unsalted butter, adding minced garlic, and sautéing until fragrant, then mix in Parmesan cheese and dried parsley.
  6. Brush the glaze over the top of the meatloaf and return it to the oven for 5-7 minutes.
  7. Once done, let the meatloaf rest for 5 minutes before slicing and serving.
