  2. In a separate bowl, mix flour, cornstarch, baking powder, and additional Cajun seasoning. Coat marinated chicken in this mixture.
  3. Heat oil in a skillet to 350°F (180°C). Test with a pinch of flour mixture; if it sizzles, it's ready.
  4. Fry chicken in batches for 4-5 minutes per side until golden brown. Transfer to a wire rack to drain excess oil.
  5. While chicken drains, toast buns until golden brown and crispy.
  6. Spread mayonnaise on buns, add fried chicken, and drizzle with jalapeño honey. Top with the other bun and serve.
