- Preheat your oven to 350°F (180°C). Line a 9x5-inch loaf pan with parchment paper.
- Mash approximately 2 cups of overripe bananas in a large mixing bowl.
- Add 1/3 cup of oil, 2 large eggs, 1 teaspoon of vanilla extract, and 1 teaspoon of apple cider vinegar. Whisk until well combined.
- In a separate bowl, whisk together 1 1/2 cups of all-purpose flour, 3/4 cup of granulated sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, and 1 teaspoon of cinnamon. Fold dry ingredients into the wet mixture.
- Pour the batter into the prepared pan and bake for 60 to 70 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Let it cool for 5 to 10 minutes on a wire rack before lifting it out using the parchment.
- In a mixing bowl, combine 8 ounces of softened cream cheese with 1/4 cup of unsalted butter and beat until creamy. Gradually add 2 cups of powdered sugar.
- Once completely cooled, frost the banana bread with the cream cheese frosting. Slice and enjoy!
