  • 2 tbsp Miso Paste Use white or yellow for milder taste
  • 1 tbsp Rice Vinegar Can substitute with white wine vinegar or apple cider vinegar
  • 1 tbsp Maple Syrup Use pure maple syrup for best flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Cut broccoli into bite-sized florets and spread them on a baking sheet lined with parchment paper. Drizzle with avocado oil and season with salt and pepper.
  3. Roast the broccoli in the preheated oven for about 20 minutes until tender and slightly charred.
  4. In a small saucepan, combine mirin and bring it to a boil. Boil for 1 minute to evaporate the alcohol.
  5. Reduce heat and stir in miso paste until dissolved. Whisk in rice vinegar, avocado oil, and maple syrup until smooth.
  6. Once broccoli is roasted, transfer to a serving bowl and toss with the miso sauce until evenly coated.
