Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the Yukon Gold potatoes, leaving the skins on, and cut them into 1/3-inch thick sticks.
  3. Soak the cut fries in cold water for 10 to 15 minutes, then drain and pat them dry.
  4. In a bowl, toss the dried fries with olive oil, salt, oregano, dill, black pepper, and garlic powder.
  5. Spread the seasoned fries in a single layer on the prepared baking sheet.
  6. Bake for about 15 minutes, flip the fries, and bake for an additional 6 to 8 minutes or until golden and crisp.
  7. Remove from the oven, top with parsley, red onion, and feta cheese, and serve warm with dipping sauces.
