Step‑by‑Step Instructions for Strawberry Shortcake Cheesecake
  1. Preheat your oven to 325°F (160°C). Prepare your 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter until resembling damp sand. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla, then add eggs one at a time.
  4. Pour the cheesecake filling over the cooled crust and bake for 45-50 minutes. Let cool at room temperature before chilling for at least 4 hours.
  5. Dissolve the strawberry Jell-O in boiling water. Once cooled, fold in whipped topping and diced strawberries.
  6. Whip heavy cream with powdered sugar until stiff peaks form.
  7. Spread the strawberry mixture over the cheesecake and chill again for 30 minutes.
