- Preheat your oven's broiler to high and arrange the oven rack about 6 inches from the heat source.
- Place the slices of sourdough bread on a baking sheet lined with parchment paper and broil for about 1-2 minutes until lightly browned.
- Flip the slices of bread over, layer sharp cheddar cheese on one slice, and return to broiler for another 1-2 minutes until cheese melts.
- On the non-cheese slice, spread a tablespoon of grainy Dijon mustard and drizzle a small amount of honey over it.
- Layer pickled jalapeños, thin slices of Honeycrisp apple, red onion, and a handful of arugula on the melted cheese slice.
- Sprinkle kettle potato chips over the apple and onion layers, then place the other slice of bread on top, mustard side down.
- Slice the sandwich in half and serve immediately while the cheese is still warm and gooey.
