Method
 

Step-by-Step Instructions
  1. Preheat your oven's broiler to high and arrange the oven rack about 6 inches from the heat source.
  2. Place the slices of sourdough bread on a baking sheet lined with parchment paper and broil for about 1-2 minutes until lightly browned.
  3. Flip the slices of bread over, layer sharp cheddar cheese on one slice, and return to broiler for another 1-2 minutes until cheese melts.
  4. On the non-cheese slice, spread a tablespoon of grainy Dijon mustard and drizzle a small amount of honey over it.
  5. Layer pickled jalapeños, thin slices of Honeycrisp apple, red onion, and a handful of arugula on the melted cheese slice.
  6. Sprinkle kettle potato chips over the apple and onion layers, then place the other slice of bread on top, mustard side down.
  7. Slice the sandwich in half and serve immediately while the cheese is still warm and gooey.
