Ingredients
  

For the Gammon
  • 2.5 kg Gammon Choose one that isn’t overly salty.
For the Herbs
  • 1 bunch Rosemary Fresh is ideal.
  • 1 bunch Thyme Best when fresh.
  • 2 leaves Bay Leaves Remove before serving.
For the Vegetables
  • 2 stalks Celery Chop finely.
  • 2 medium Carrots
  • 1 large Onion Yellow onions work perfectly.
  • 4 cloves Garlic Smashed.
For the Spices and Heat
  • 1 optional Chilli Adjust according to preference.
  • 10 whole Peppercorns Whole or cracked.
For the Glaze
  • 2 tablespoons Olive Oil Essential for sautéing.
  • 200 g Marmalade Primary glaze ingredient.
  • 750 ml Red Wine Opt for a smooth variety.
For the Aromatic Spices
  • 2 pieces Star Anise
  • 5 cloves Cloves Use sparingly.
  • 1 stick Cinnamon
For Brightness and Sweetness
  • 1 tablespoon Clementine Zest Fresh zest is most vibrant.
  • 1 ring Pineapple Rings Can substitute with canned peaches.
  • 150 ml Pineapple Juice Preferably fresh.

Method
 

Preparation Steps
  1. Preheat your oven to 160°C (320°F).
  2. Sauté chopped celery, carrots, onion, and garlic in olive oil over medium heat for 5-7 minutes.
  3. Transfer the sautéed vegetables to a roasting pan and place the gammon fat-side up.
  4. Sprinkle rosemary, thyme, and bay leaves over the ham.
  5. Mix red wine, pineapple juice, and marmalade in a bowl and pour over the gammon.
  6. Cover with foil and roast for 2.5 to 3 hours, basting every 30–40 minutes.
  7. Remove the foil, increase temperature to 200°C (400°F), and roast uncovered for an additional 15-30 minutes.
  8. Check for doneness with a meat thermometer; the temperature should read 71°C (160°F).
