Preparation Steps
- Preheat your oven to 160°C (320°F).
- Sauté chopped celery, carrots, onion, and garlic in olive oil over medium heat for 5-7 minutes.
- Transfer the sautéed vegetables to a roasting pan and place the gammon fat-side up.
- Sprinkle rosemary, thyme, and bay leaves over the ham.
- Mix red wine, pineapple juice, and marmalade in a bowl and pour over the gammon.
- Cover with foil and roast for 2.5 to 3 hours, basting every 30–40 minutes.
- Remove the foil, increase temperature to 200°C (400°F), and roast uncovered for an additional 15-30 minutes.
- Check for doneness with a meat thermometer; the temperature should read 71°C (160°F).
