Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Once boiling, add your spaghetti or chosen pasta, cooking it according to the package instructions until al dente, about 8–10 minutes.
  2. While the pasta cooks, place a large skillet on medium heat and pour in the high-quality extra virgin olive oil. Allow the oil to heat for about 1–2 minutes until it shimmers gently.
  3. Add garlic flakes to the hot skillet, followed by a sprinkle of red pepper flakes. Sauté these ingredients for about 1 minute until fragrant.
  4. Once the pasta is cooked, carefully drain it, reserving about a cup of the pasta water. Transfer the drained pasta into the skillet with the sautéed garlic and oil. Toss gently.
  5. If your Midnight Pasta appears dry, add reserved pasta water until you reach your desired consistency.
  6. Sprinkle dried parsley and freshly cracked black pepper over the pasta, adjusting seasoning to taste. Toss everything together gently.
